These green, unripe Athinolia olives are kept in brine with organic thyme and lemon. In October, when the Athinolia variety turns the right green, better trees are selected and the olives are harvested by hand. This is done with great care as the olives must not be damaged during harvesting. The olives are picked and then stored in special barrels in water with salt, thyme and lemon. Olive oil made from this variety is of high quality. It is very healthy and has a very good aftertaste.
You can taste the olives with food or drink. They are dice.
